Recipe for Moroccan Leg of Lamb Goulash

Ingredients:
125 ml Flour
1 Tablespoon butter
30 ml Olive oil
1 kg Leg of lamb cubed
1 Big Onion cut in pieces
5 ml Crushed garlic
5 ml Coriander
3 ml All Spice
5 ml Cumin
10 ml Paprika
3 ml Cayenne pepper
5 ml Harissa paste
1 Litre chicken stock
1 Small tin tomato paste
125 ml sultanas
125 ml Almonds
Handfull fresh coriander for garnishing

Method:
Heat the oil and butter in a heavy based casserole or pot or deep
frying pan.
Coat the meat with the flour and fry for 5 minutes.
Take out and set aside.
Add 20 ml oil to the pan or pot and fry the onions and garlic for
5 minutes.
Add all the other ingredients except the sultanas, almonds and
fresh coriander and cook 3 minutes.
Put the meat back into the pot or pan and bring to the boil.
Lower the heat and simmer for 3-4 hours or until the meat is
tender.
Add the sultanas and almonds.Serve with rice and garnish with the
fresh coriander
