Brazilian Beef stew recipe.


1 kg skirt steak/goulash.
1/4 cup oil.
3 onions, sliced.
1 clove garlic, crushed.
1/4 cup flour.
1 cup strong black coffee.
1 cup beef stock.
1 can 400 gm tomatoes.
Salt & pepper to taste.
Pinch nutmeg.
2 teaspoons soft brown sugar.


Cut meat into blocks & fry quickly in oil.
Remove from pan; lower the heat and add onions & garlic.
Cook until tender.
Sprinkle in the flour and cook for a minute.
Gradually add coffee, beef stock, then add tomatoes. Season with
salt & pepper, nutmeg and sugar.
Place meat in oven proof dish, pour over tomato mixture,
cover and place in the oven (180 deg) for 2 hours.
Serve with rice or buttered noodles and a salad.

Adding some corsely sliced mushrooms in the last 20 minutes, will
enhance the dish.
